To change the language in the Telegram iOS app, you can easily do so using a link. The current version of the Telegram iOS app officially supports Chinese.

This feature is available for Telegram and Telegram X versions 5.0.16 and above.

Simply click the corresponding link directly, then select "Change" to complete the language change.
